Eddie, has 20 years experience as a professional chef and has worked in 1 & 2 Michelin kitchens.
For the last decade he has traveled the world as a private chef delivering a refined, bespoke service.
Now back home, he will be putting that expertise into his own ventures: a pop up restaurant focused on seasonal, memorable dishes, and Hakko, a street food company built on high quality, hand crafted Asian-inspired food.

For the main course, our Luna Azul Merlot is the ideal match. With soft tannins, deep ripe berry flavours and a subtle hint of spice, it pairs wonderfully with the richness of the beef short rib. The wine’s smooth, rounded character harmonises with the caramelised edges of the burnt onion and adds depth to the indulgent beef-fat potatoes, creating a warm and satisfying pairing to savour.
